Cooked Zucchini
About 4 servings
1/8 cup olive oil
1/4 cup chopped onion
4-5 small green zucchini
2 small yellow zucchini
2 Tablespoons butter
1/2 bouillon cube
salt and pepper to taste
In a medium sauce pan sauté onion in oil. Wash and slice zucchini into 1 inch slices. Add to pan and top with butter, bouillon and salt and pepper. Cook on low heat until zucchini is tender but not mushy.
