Stuffed Green Peppers

 

Stuffed Green Peppers

4 large green peppers

1 lb ground beef

1/3 cup onion, chopped

1/4 cup green pepper, chopped

1 15oz can diced tomatoes

1 tsp. Worcestershire sauce

1 cup uncooked rice

3 ½ cups water

Salt and pepper

1 cup shredded cheddar cheese

Cut the tops off of the peppers and wash. Save the tops and chop, making ¼ cup. Put the peppers in a Dutch oven filled with water. Boil for 5 minutes. Drain. Lightly salt the inside of peppers

Meanwhile brown the ground beef in a large skillet. Drain. Add onions and diced peppers and sauté with the beef. Add tomatoes, Worcestershire sauce, salt and pepper, rice and water. Cover and cook for about 20 minutes, or until the rice is cooked. Add the cheese until melted.

Spoon the meat mixture into peppers. Place in a shallow baking dish, cover with foil and bake in a preheated 350 oven for 20-25 minutes.
