Sausage with peppers and potatoes

 

Stuffed Green Peppers

Serves 6-8

 

2 lbs hot, mild, or half of each Italian sausage

2 large green peppers cut into strips

4 medium potatoes, peeled and diced

2 onions, sliced

2 Tablespoons Oregano

2 garlic cloves, minced

1 teaspoon cayenne pepper

Salt and pepper

Olive oil

Pre- heat oven to 350.

Cut the sausage into bite sized pieces and place into a 9x13 baking dish. Add peppers, potatoes, and onion. Stir in garlic, oregano, salt and pepper, and cayenne pepper. Drizzle olive oil over the top. Cover with foil and bake for about an hour. Remove foil and cook for another 15 to 20 minutes.
