Peppers and Potatoes
About 6 servings
1/4 cup olive oil
1 large onion chopped
1 clove minced garlic
2 large green peppers cut into strips
5 potatoes, peeled and diced
1 14.5 oz can diced tomatoes
Salt and pepper to taste
In a dutch oven sauté the onion and garlic in oil. Add remaining ingredients. Cover and cook about 45 minutes on med-low heat until potatoes are tender. Add a little water while cooking so not to dry out potatoes.
Serve warm
