Grilled Salmon
6-8 servings
2 ½- 3 lb salmon fillet
Jamaican Jerk Sauce
2 fresh tomatoes, sliced
1 large onion, thinly sliced
1 fresh lemon, sliced
Place the salmon in a gallon size zip lock bag. Pour ½ of the bottle Jerk sauce over the salmon and marinade 2-6 hours.
Lay out 3 layers of aluminum foil. Place the salmon flat on the foil and top with the tomatoes, onions, and lemon. Pour some of the jerk sauce over the top and wrap the salmon very tightly in foil. Grill over medium coals for about 15 minutes per side. Be very careful while flipping.
