Green Chili
2-21/2 lbs pork, cut into chunks
3 T cooking oil
½ medium onion, chopped
1 clove garlic, minced
1- 28oz can diced tomatoes
2- 7oz cans diced green chili
1 bouillon
salt and pepper to taste
jalapeños (optional)
In a Dutch oven sauté pork, onion and garlic in the oil. Add tomatoes, bouillon, salt and pepper and 5 cups water to the pan. Simmer on low heat for about 1 to 11/2 hours. Add chopped jalapeños for spice.
Smother over a burrito or enjoy it by itself.
