Green Beans Almandine
Serves about 4
1 lb fresh green beans
½ cup slivered almonds
1 cup fresh mushrooms, washed and sliced
3 T. butter
3 T. lemon juice
Snap off ends of green beans and wash. Place green beans in a medium saucepan and cover with salted water. Cook for 10-15 minutes or until crisp-tender. Drain.
Meanwhile, in a small saucepan cook and stir in almonds and mushrooms in melted butter over medium heat until almonds are golden. Remove from heat and add lemon juice. Stir almond mixture into green beans.
