Chicken with Soy sauce and Capers

Chicken with soy and capers

8 to 10 bone in chicken thighs skins removed

1/8 cup vegetable oil

1/4 cup soy sauce

4 to 5 Tablespoons capers

1/4 cup chopped fresh parsley

Heat oil in a large skillet. Add chicken. Cook the chicken uncovered on med to low heat. While the chicken is cooking add the soy sauce and cook uncovered for about 20 minutes.

Add the capers and continue cooking on low heat for 10 more minutes. Just before serving add parsley. Optional, squeeze the juice of 1/2 lemon over the top.

Serve over rice if desired.
