Chicken Cacciatore
1 whole cut up chicken pieces, skinned and washed
1 28 oz can diced tomatoes
2 large onions, sliced
2 garlic cloves, minced
1 bay leaf
1 T. oregano
1 stick butter or margarine
salt and pepper to taste
Put all of the ingredients in a Dutch oven, cover and cook over medium heat for about an hour.
This dish is wonderful over polenta or rice.
