Breakfast Burritos
1 lb bacon or breakfast sausage
30 oz bag frozen hash browns
12 eggs
2 1/2 cups cheddar cheese.
Cook bacon or sausage in a large skillet. Remove from skillet and drain on paper towels. When cool chop into chunks.
Use some of the grease left in the skillet to cook hash browns. Additional oil may be needed while cooking.
Season with salt, pepper, and Cayenne pepper. Add the bacon or sausage to hash browns. Continue cooking and add eggs on top. Stir all together.
When eggs are almost cooked add cheese and stir. Spoon into tortillas. Add salsa if desired. Makes about 18 10inch burritos.
These burritos freeze well. Do not add salsa if freezing. Wrap individually in foil.
