Makes about 12

1 8oz cream cheese

1 T. honey

1 T. milk

1 t. lemon extract

2 eggs

1 1/3 cups milk

¾ cup all-purpose flour

1 ½ t. sugar

½ t. vanilla

fruit of choice for topping

 

For filling, in a medium mixing bowl beat together cream cheese, honey, the 1 T. milk and lemon extract. For wrappers, in a medium bowl using a wire whisk or rotary beater whisk or beat the eggs, the 11/3 cups milk, flour, sugar, and vanilla until combine.

Heat a lightly oiled 6-inch skillet over medium heat; remove skillet from heat. Spoon 2 tablespoons batter into skillet; lift and tilt skillet to spread batter evenly. Return to heat; brown wrapper on 1 side only for 1 to 2 minutes. To remove wrapper, invert pan over clean white paper towels. Repeat with remaining batter, lightly oiling skillet, if necessary. Separate wrappers with dry paper towel. Keep wrappers covered.

To serve, spoon about 1 rounded tablespoon of the cheese mixture across wrapper and roll. Top with fruit.
